Marvellous Medina Sandwich

INGREDIENTS (Serves 6 people)

  • 12-18 Falafel

  • 6 round small/medium pita breads, split

  • 2 baby gem lettuce, shredded

  • 1/2 bunch flat-leaf parsley, leaves picked

  • 200g pickles, thinly sliced

  • 1 large red onion. thinly sliced

  • Handful of cherry tomatoes

  • 2 tsp sumac

  • Tahini or yoghurt, to drizzle

PROCESS

We recommend deep frying our Falafel for a crispy outer and a soft, fluffy centre. Throw these in a toasted pitta with all the ingredients above and garnish to your hearts desire.

If you’re a fan of garlic, why not crush some with Greek yoghurt for a tasty alternative to a tahini drizzle.
