Marvellous Medina Sandwich
INGREDIENTS (Serves 6 people)
12-18 Falafel
6 round small/medium pita breads, split
2 baby gem lettuce, shredded
1/2 bunch flat-leaf parsley, leaves picked
200g pickles, thinly sliced
1 large red onion. thinly sliced
Handful of cherry tomatoes
2 tsp sumac
Tahini or yoghurt, to drizzle
PROCESS
We recommend deep frying our Falafel for a crispy outer and a soft, fluffy centre. Throw these in a toasted pitta with all the ingredients above and garnish to your hearts desire.
If you’re a fan of garlic, why not crush some with Greek yoghurt for a tasty alternative to a tahini drizzle.
