Falafel and Kubbeh Spinach Salad
INGREDIENTS (Serves 2-3 people)
5-8 Kubbeh
90g baby leaf spinach
1 baby gem lettuce, shredded
100g olives
1/2 watermelon, chopped
125g feta cheese, diced
Handful of cherry tomatoes
Yoghurt or vinegarette, to drizzle
PROCESS
We recommend deep frying our Falafel and Kubbeh for a crispy outer and a soft, fluffy centre. Toss them with some home-made garlic infused greek yoghurt, or if you prefer a lighter taste, a vinegarette.
We love adding in some watermelon and feta cheese for those Mediterranean summer vibes.
